Fragrant oysters with spicy sauce

Oysters are representatives of marineBivalve mollusks, most of their species can be eaten even in raw form. If you decide to pamper yourself and guests with an exotic dish of oysters, then serve them under spicy sauce.

Fragrant oysters with spicy sauce

You will need

  • Four servings:
  • - 12 fresh oysters;
  • - 60 g of butter;
  • - 4 tbsp. Spoons of wheat flour, bread crumbs;
  • - 6 stalks of green onions;
  • - a bunch of parsley;
  • - 2 celery, 2 stems of tarragon;
  • - 1 kg of coarse salt;
  • - salt usual, a pinch of chili pepper, black pepper peas.

Set the oven to 220 degrees. Fill the baking tray with rock salt in half.

In a frying pan over medium heat, melt the butter,add flour, fry until smooth (about two minutes). Add oyster juice (for this oyster open over a bowl), cook until the sauce thickens to the state of the paste. Season with cayenne pepper, green onions, celery, tarragon, parsley, pepper and salt. Reduce heat, cook for 1 hour. Transfer the sauce to the food processor, add bread crumbs, make a smooth paste.

With oysters, remove the upper leaves. Carefully remove the oyster from the shell with a knife, lay it on a pillow of salt. Let the oysters stand a little.

Pasta put in a pastry bag with a figured nozzle, cover the oyster paste. Cook in the oven for no more than seven minutes.
