You will need

  • - eggplant 2 pieces;
  • - sweet pepper 2 pcs;

For the sauce, sweet pepper to peel off the seeds andpartitions, cut into cubes. Tomatoes 4 pieces cut into cubes. Peel onion and garlic and chop. In a frying pan, heat 2 tablespoons of olive oil and fry onion and a half of garlic. Add chopped sweet peppers and fry for another 5 minutes. Add the tomatoes, fry another 10 minutes over low heat. Eggplant and zucchini wash, let dry and cut into slices. The remaining tomatoes are also cut into circles. Basil cut and mix with the remaining oil and garlic.

In the baking dish, put the sauce first,then a layer of aubergines. On aubergines lay a layer of tomatoes and zucchini, then again eggplant. Pour a mixture of garlic and oil from above, season with pepper and salt. Cover the form with foil and bake for 1 hour at 190 ° C. When serving on the table, decorate with fresh chopped greens.
