The ferment should have access to air, for natural fermentation and yeast formation. Leave the leaven in a warm dark place and keep it there for 3 days, stirring occasionally. When leaven begins to actively ferment, proceed to the next stage.

Cook the must. To do this, the berries of the black mountain ash, also not washed, pounded with a tolush or blurted with a blender. Do not use a metal grinder for this purpose! Prepare light sugar syrup from sugar with a little water. Let it cool down.

Pour the dried berries into a bucket, fillwater and add the sugar syrup, stir and cover a bucket of gauze, folded in several layers. Leave the wort for a week, in a dark warm place. Periodically stir. The dried berries will float to the surface and form a film covering the access of oxygen; your job is to break it.

After 7-9 days strain the wort through gauze,wring out the sediment. The resulting liquid is poured into a 5 liter bottle and covered with a polyethylene lid. Now sugar should be added to the rowan juice. The recommended rate is from 250 to 300 grams of granulated sugar per 1 liter of liquid. Better do this in two steps: first add about half of the sugar, put the container in a warm place, wait for the fermentation, and then add the remainder. You can simply pour the granulated sugar into the liquid, but it is better to first dilute it in a certain amount of juice. The opening of the tank must be plugged with a lump of gauze or cotton wool, so that the carbon dioxide produced during fermentation can go out.

A fortnight or two ferment will be enoughstormy, then within two or three weeks quiet. Form a young wine carefully pour into a new container, trying not to pick up the sediment. Add sugar to the wine, at a rate of approximately 150 grams per liter of liquid, and put it in a cool place. In a few weeks it will be ready for consumption.

Homemade wine is prepared quite simply. At the same time, you will be sure that the alcoholic beverage is obtained solely from natural ingredients. If as a basis you use the berries of chokeberry, the wine will have a pleasant tart taste.
