Cupcakes, like pies, can be baked with absolutely any filling. I propose to cook them from courgettes, onions and bacon. This dish perfectly fits the festive table as a snack.

How to cook squash cupcakes with onions and bacon

You will need

  • - Onions - 150 g;
  • - a young vegetable marrow - 300 g;
  • - salt - 1 teaspoon;
  • - eggs - 2 pieces;
  • - sugar - 1 teaspoon;
  • - baking powder for the dough - 1.5 teaspoons;
  • - flour - 2/3 cup;
  • - bacon - 70 g.

After peeling the onions from the husk, grind it onrather small pieces, then transfer it to a frying pan with sunflower oil and fry until it becomes soft and transparent. The most important thing is that the onion is not burned.

With zucchini do the following: grind it, wiping it on the shallowest grater. If it is not young, then first clean the skin from its surface. After seasoning the resulting mass with salt, thoroughly mix it and take it aside for about 3-5 minutes.

Stir, as it should, eggs with granulated sugar. Then, to the resulting egg-sugar mixture, enter the wheat flour together with the baking powder for the dough. Stir the mass until it turns into a uniform mass.

Bacon, finely chopped, enter to the bulk. Then add the roasted onions together with the butter and squeeze the grated zucchini from the juice. Mix everything properly.

Lubricate the special forms for cupcakes with oil and sprinkle them with a small amount of flour, put them into the dough.

Bake the dish in the oven, the temperature of which is 200-220 degrees, for 12-15 minutes. Baking should brown. Cupcake cupcakes with onions and bacon are ready!
