How to cook a delicious Adzhika
Adjika is a traditional Abkhazian dish, which is a sharp sauce made from vegetables and seasonings. From the Abkhazian language adjika is translated as "salt". Also adzhika is also a Georgian dish.
Preparation of products
To prepare Adzhika you will need: 1,5 kg of zucchini, 900 g of tomatoes, 250 g of carrots, 250 g of bell pepper, 50 g of granulated sugar, 80 ml of table vinegar, 100 ml of sunflower oil, 1 tbsp. l. red ground pepper, 2 heads of garlic, 1 tbsp. l. salt.
Preparation
Prepare vegetables for cooking Adjika. Wash them and dry them. Carrots and zucchini peel, pepper cut into halves and remove seeds from them. Twist all vegetables through a meat grinder or chop in a food processor, place in a large saucepan. Then add to the mass the necessary amount of sunflower oil, granulated sugar and salt, mix the ingredients carefully.
Put the pan on the stove, turn on the slow fire. Cook the adjika for 45 minutes. Add to the table vinegar, ground garlic and red ground pepper, cook for another 10 minutes.
Transfer the adzhika to sterilized dry jars,roll them with boiled lids. Bins with azhika turn and put on the lid, top cover with a cover or a warm towel, leave until completely cooled.
Delicious home ajika ready! You can serve it as a sauce for side dishes and main courses.
